Veg mania with pork and parnsips :)

There’s nothing you want more than veg after a heavy weekend of alcohol and fast food. I wanted a clean detox that was still full of flavour but left me feeling guilt free and pretty amazing!
Totally easy to do and really quick, pork stir fry is perfect the cold nights and you can whack in whatever you have im the fridge or freezer!

The added parsnips are due to the fact that I had a spare in the cupboard and was craving crispy honey parsnips! Give it a go 🙂

Ingredients:
However much pork you want
Cabbage
Spinach
Red onion
Mixed veg (Brocolli, carrots, qualiflower)
Light sweet and sour sauce
Peppers
Parsnips

Method:

For the parsnips:
Peel the parsnips and cut into long chip shapes or smaller wedges, whatever you prefer. Next boil them until you can get a fork through easily. Place them on a baking tray and bake in the oven until they start to look golden and crispy.

Next cook the pork in a wok or frying pan until it starts to brown. Put the mixed frozen veg on the stove at the same time and wait for it to boil. When it is near done add the cabbage to the mix.

Once all the veg is done, drain and add it to the pork, along with the peppers, spinach and red onion. Then add the sweet and sour sauce and stir everything together.

Let it simmer for a few minutes while you take the parsnips out of the oven and drizzle them with honey. Put them back in for a further 10 minutes so the honey can seep through.

That’s pretty much it 🙂 you can add wholewheat noodles if you’re feeling a little more hungry and need an energy boost!
