Wake up tomorrow to a new breakfast idea!

Wholemeal muffins are low calorie, high fibre gems and they go with absolutely anything!

The other morning I was looking for something to restore my energy after burning everything I had in my new ballet sculpt class and this was perfect! Simple, easy and full of natural goodness 🙂

Ingredients:
1 or 2 eggs
Milk
Pepper (optional)
Avocado
Plum tomatoes
1 wholemeal muffin
Low fat butter

Method:
If you only have 1 egg, using a little milk will bulk out the scrambled egg so it makes enough for both halves of the muffin. I love to add a bit of pepper to the mix to give it extra flavour.
Whisk the egg and milk and chuck it in the microwave for 2 minutes, take it out and give it a stir and put it back in for a further 2. The scrambled egg is ready when it looks like scrambled egg basically 😉

Cut the muffin in half and put it in the toaster and then slice the tomatoes into halves and scoop out the avocado into small pieces so it fits on the muffin.
